Plus, you can add any additional ingredients to make them your own. To create this recipe at home, gather your ingredients and preheat your oven to 400 degrees. Use cooking spray or oil to prepare a muffin pan, and in a large mixing bowl, combine the quinoa, cheese, onion, and broccoli. In a separate bowl, whisk together eight eggs until light and fluffy. After you add your eggs to the broccoli mixture, spoon an even amount of the ingredients into each cup of the muffin pan. Bake for 20 minutes and your muffins are ready! 

Healthy Broccoli Baked Tots

Tater tots are always a great addition to any school lunch. Add a healthy spin to this favorite snack by making healthy baked broccoli tots. This recipe calls for two cups of uncooked broccoli, one large egg, diced yellow onion, cheese, panko and Italian breadcrumbs, parsley, salt, and pepper. To prepare, preheat your oven to 400 degrees and grease a baking sheet with oil. Blanch your broccoli in boiling water for one minute, then add the broccoli to cold tap water to stop it from cooking more. Chop the broccoli into fine pieces, then combine with the egg, breadcrumbs, onion, and seasonings. Next, shape the tots and add them to the baking sheet to cook for 18-24 minutes. Once they’re done, you have a healthy snack that can be enjoyed with any dipping sauce. 

Broccoli Sweet Potato Cakes

If you have a picky eater in your family, this broccoli sweet potato cake recipe is the perfect way to hide the taste of broccoli. These savory cakes call for one pound of broccoli florets, two pounds of peeled and diced sweet potatoes, an onion, thyme, water, olive oil, and salt and pepper. Combine broccoli, sweet potato, and onion in a pot of boiling water, then reduce to a medium heat and cook for 20 minutes. Once cooked, drain the vegetables and use a potato masher to mash the ingredients together. Mix in thyme and season with salt and pepper before dividing the mixture into patties. Add the patties to a large skillet with olive oil and cook until golden.
