Roasted Broccoli and Mushrooms with Onion Wedges

Ingredients:

  • 1 large head of Smith’s Farm broccoli, cut into florets
  • ½ pound mushrooms, quartered
  • 2 small red onions, cut into wedges
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar or more to taste
  • salt and ground black pepper to taste

Directions:

  1. Preheat oven to 425°F.
  2. Place Smith’s Farm broccoli florets, mushrooms, and red onion on a large baking sheet.
  3. Drizzle with olive oil and toss to coat.
  4. Season to taste with salt and black pepper.
  5. Roast in preheated oven for 20-25 minutes or until lightly brown and tender.
  6. Remove from the oven.
  7. Drizzle with balsamic vinegar and toss to coat.
  8. Serve immediately.
