Roasted Cauliflower and Hummus Bowl

Ingredients:

Spicy Roasted Chickpeas:

  • 1 can of chickpeas, drained and skins removed
  • 1 tbsp of olive oil
  • 1/4 tsp of cumin
  • 1/4 tsp of salt
  • 1/4 tsp of smoked paprika
  • 1/4 tsp of cayenne 
  • freshly ground pepper to taste

Bowl:

  • 2 cups of classic creamy hummus
  • 4 cups of roasted Smith's Farm cauliflower
  • 2 cups of spicy roasted chickpeas
  • microgreens
  • 1 carrot, ribboned
  • 4 tbsp of fresh mint
  • olive oil to drizzle
  • za'atar to sprinkle

Directions:

Spicy Roasted Chickpeas:

  1. Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
  2. In a small bowl, mix all ingredients and spread, evenly spaced, onto the prepared baking sheet. Bake for 30 minutes, remove and allow to cool.

Building Your Bowl:

  1. Equally, divide all ingredients into 1/4.
  2. Smear the bottom of each bowl with the hummus.
  3. Top with roasted cauliflower and chickpeas.
  4. Sprinkle with microgreens, carrot ribbons, and mint.
  5. Drizzle with olive oil and sprinkle with za’atar.
