- 1 cup broccoli, processed
- 1 cup shredded cheddar cheese
- 1/3 cup grated parmesan cheese
- 2 eggs, beaten
- Spray waffle iron with cooking spray and preheat.
- Using a high powered blender or food processor, process broccoli until it’s the consistency of rice.
- Mix together all ingredients in a medium-sized bowl.
- Add 1/3 of the mixture to the waffle iron and cook for 4-5 minutes until golden and cooked through.
