Lemon Roasted Broccoli with Pine Nuts


1 large head of broccoli, cut into 1 1/2" florets; stems peeled and sliced thinly

1/4 cup extra-virgin olive oil

salt and pepper

1 1/2 Tablespoons pine nuts

2 teaspoons fresh lemon juice

1 teaspoon minced shallots

basil leaves



Preheat oven to 440 degrees

Toss the broccoli an stems with 2 Tablespoons of olive oil on a large baking sheet

Season with salt and pepper

Roast the broccoli for about 30 minutes, turning at 15 minutes.

While the broccoli is baking, toast the pine nuts in a small skillet over medium heat for approximately 4 minutes

In a small bowl whisk the lemon juice with the shallots and remaining olive oil, and salt and pepper to taste

Put the broccoli into a serving bowl, add the lemon dressing, pine nuts and basil

Serve warm
