Banana Cauliflower Muffins

Ingredients:

  • 1½ cups oat flower
  • 1 tbs stevia
  • ½ tsp bicarb soda
  • 1 tbs poppy seeds
  • 2 ripe bananas
  • 1 cup Smith's Farm's cauliflower florets
  • 2 tbs unhulled tahini

Directions:

  1. Preheat oven to 180C/350F.
  2. Mix the oat flour, stevia, bicarb and poppy seeds in a large bowl.
  3. Blend the bananas, cauliflower and tahini until smooth.
  4. Mix the wet ingredients into the dry until well combined.
  5. Spoon into a muffin tray and bake for 45 mins.
  6. Let cool before icing.

NOTES FOR THE PEANUT BUTTER ICING:

4 tbs peanut butter

1 tbs stevia

3 tbs water

Blend or mix well all the ingredients. I used crunchy peanut butter so I blended my icing, smooth peanut butter would work better without blending.
